Meringue Raspberry Cake / Torta de Merengue Frambuesa

I introduce to you my favorite cake ever. Which I made for my mom's birthday this year. You can make the meringues a couple days ahead (or buy them) and assemble it just one day before the party. You are not gonna believe how easy it is and of course, yummyyyy!!

Les presento mi torta favorita de la vida. Que hice para el cumpleaños de mi mamá este año. Pueden hacer los merengues un par de días antes (o comprarlos) y armar la torta un día antes de la fiesta. No van a creer lo fácil que es y por supuesto, ñamiiii!!


Meringue Raspberry Cake:

Meringues:
- 2 cups egg white
- 2 cups sugar
- 2 cups icing sugar

Filling:
- 1 1/2 lt whipping cream, cold (put it in the fridge one day before).
- 1 kg raspberries (natural or frozen)
- 3 tbsp icing sugar

Decoration: 
- 100 grs bitter chocolate, melted. 

Torta de Merengue Frambuesa:

Merengues: 
- 2 tazas de clara de huevo
- 2 tazas de azúcar
- 2 tazas de azúcar flor

Relleno:
- 1 1/2 litro de crema para batir, fría (poner en el refrigerador un día antes).
- 1 kg de frambuesas (naturales o congeladas)
- 3 cdas de azúcar flor

Decoración: 
-100 grs de chocolate amargo, derretido

Directions: 
1. Preheat oven at 180°C. 
2. In a sauce pan heat sugar and a couple tablespoons of water, to get a thick syrup, let it boil to get a thick and heavy syrup. Meanwhile beat the egg whites in a clean and dry bowl, until soft peaks are form.
3. Add the boiling syrup while beating, continue to beat until it gets cooler. Finally add the icing sugar and beat for another extra 3 minutes 
4. On a parchment paper draw a circle (as big as your oven allows you to) and pour 1/3 of the meringue mix. 
5. Put it in the oven and lower the temperature to 120°C. Bake until the meringue looks dry and not golden. Turn off the oven and do not remove the meringue until the oven cools down. 
6. Repeat steps 4 and 5 with the two remaining meringues. 
7. Once the meringues are ready (this is why I recommend you to make them at least one day ahead or just buy them), you can assemble the cake:
8. Beat the cream until it is thick, if the weather is too hot you should put a bowl with water and ice beneath the cream bowl while beating. Once it is ready add icing sugar. 
9. In a cake platter first put the meringue, cream and raspberries, then repeat the same process until you finish with the last meringue and cover with the remaining cream. 
10. For garnishing the cake I used remains of the meringue (because the surface tends to detach) and melted chocolate for writing and making hearts. The advantage of melted chocolate is that it cools down real fast so there's no problem if you make any mistakes, you can easily remove them and make them again. 
11. Once the cake is ready, put it in the freezer and keep it always there, take it out a couple minutes before serving. 

Instrucciones: 
1. Precalentar el horno a 180°C.
2. En una olla calentar azúcar y un par de cucharadas de agua, dejar hervir para tener un almíbar de pelo espeso. Mientras tanto batir las claras en un bowl limpio y seco, hasta punto nieve. 
3. Agregar el almíbar hirviendo mientras bates, continuar batiendo hasta que se enfríe. Finalmente agregar azúcar flor y batir por otros 3 minutos. 
4. En un papel mantequilla dibujar un círculo (tan grande como tu horno te lo permita) y verter 1/3 de la mezcla de merengue. 
5. Poner en el horno y bajar la temperatura a 120°C. Hornear hasta que el merengue se vea seco y no dorado. Apagar el horno y no sacar el merengue hasta que el horno se enfríe. 
6. Repetir los pasos 4 y 5 con los dos merengues restantes. 
7. Una vez que los merengues estén listos (es por esto que recomiendo que los hagan al menos un día antes o simplemente los compren), pueden armar la torta: 
8. Batir la crema hasta que esté espesa, si el clima es muy caluroso deberías poner un bowl con agua y hielo debajo del bowl de crema mientras bates. Una vez que este lista agrega azúcar flor. 
9. En un plato de torta primero pon el merengue, crema y frambuesas, luego repite el mismo proceso hasta que termines con el último merengue y cubre con la crema restante. 
10. Para decorar la torta utilicé los restos del merengue (porque la primera capa tiende a desprenderse) y chocolate derretido para escribir y hacer corazones. La ventaja del chocolate derretido es que se enfría muy rápido por lo que no hay problema si cometes errores, puedes sacarlos fácilmente y hacerlos de nuevo. 
11. Una vez que la torta esté lista, guardar en el freezer y mantenerla siempre ahí, sacarla un par de minutos antes de servir.

Patriotic Cake / Torta Dieciochera

Happy September 18th to all of my beloved Chileans =D I love this festivity, it gives you the perfect excuse to party, get together with the family, hang out with friends, cook yummy meals, and just simply celebrate.

So this year I got truly patriotic, and made a Red, White and Blue Cake which was amazingly good. You gotta try this some time.

I got the recipe from www.recipegirl.com, so i'll give you the link of the recipe and translate it into spanish for those who don't understand english.

Felíz 18 de Septiembre a todos mis amados Chilenos =D Amo esta festividad, te da la excusa perfecta para festejar, juntarse con la familia, salir con amigos, cocinar platos deliciosos y simplemente celebrar.

Este año me puse realmente patriótica y preparé una Torta Blanca, Azul y Roja, que estaba increíblemente buena. Tienen que probarla algún día.

Saqué la receta de www.recipegirl.com, así que les daré el link de la receta y la traduciré al español para los que no entienden ingles.

Ingredientes:

- 2 1/2 tazas de harina
- 1 cda de polvos de hornear
- 1/2 cdta de sal
- 1 1/4 taza de buttermilk*
- 4 claras de huevos grandes
- 1 1/2 taza de azúcar blanca granulada
- 1/2 taza (125 gr.) de mantequilla sin sal
- 1 cdta de extracto de vainilla
- Colorante rojo y azul en gel**

*Preparación del Buttermilk: En un vaso medidor poner 1 1/4 taza de leche entera, agregar 1 1/2 cdta de jugo de limón, dejar reposar 5 mins, revolver y usar. ¿Qué es? ¿Para qué sirve? El buttermilk es el suero de la mantequilla y productos lácteos y sirve para obtener un mejor sabor y esponjosidad en la repostería.
** Yo usé colorante liquido y funcionó de lo mas bien.

Instrucciones:

1. Poner dos rejillas en el horno (yo puse solo una) y pre calentar el horno a 170°C. Aplicar spray anti adherente a tres moldes de 20 o 22 cm de diámetro (yo usé mantequilla). Agregar una cucharada colmada de harina a cada uno, mover para esparcirla y golpear para sacar el exceso.

2. Para preparar la torta: Cernir la harina, polvos de hornear y sal. Batir el buttermilk con las claras en un bowl mediano. En otro bowl grande, usar un batidor eléctrico para mezclar la mantequilla y azúcar, batir a velocidad media por 3 minutos, hasta que la mezcla esté muy clara. Agregar el extracto de vainilla mientras se continúa batiendo, luego agregar un tercio de la mezcla de harina, seguir batiendo a velocidad media. Agregar la mitad de la mezcla de buttermilk con huevo, luego agregar la mitad de los ingredientes secos, hasta que éstos se incorporen. Agregar el resto de la mezcla de buttermilk con huevos y luego lo que queda de los ingredientes secos. Finalmente, seguir batiendo por 2 minutos más para asegurarse que esta completamente mezclado y bien aireado. Dividir la mezcla en tres partes iguales. Teñir dos de las mezclas, una roja y otra azul, agregar el color de a poco hasta lograr el deseado. Poner la mezcla en cada uno de los moldes.

3. Hornear por 20 a 25 min. para los moldes de 20 cm y 15 a 20 min. para los moldes de 22 cm, o hasta que los bizcochos se hayan elevado y la superficie pueda tocarse, insertar un mondadientes en el centro para ver si éste sale limpio. Pone los bizcochos en una rejilla para que se enfríen durante 5 min, luego pasar un cuchillo por el borde de los moldes ( a mi me bastó con dejarlos enfriar 5 mins y darlos vuelta, si el molde es de teflón no pasar un cuchillo porque el molde se echa a perder). Invertir y dejar enfriar a temperatura ambiente. Cuando se hayan enfriado, rellenar y cubrir la torta.

Esta torta la rellene con queso crema y por fuera la cubrí con merengue.

Tres Leches Cake / Torta de Tres Leches

As promised to my beloved followers, from now on I'll be posting in english and also spanish, it's probably gonna take a little while to edit every entry I've made....but hopefully I'll find the time to translate everything during this weekend =)

This is the most requested recipe, it's originally from my mom, but she had no problem with sharing with us her yummy recipe, here it goes:

Como les prometí a mis queridos seguidores, desde ahora en adelante estaré posteando tanto en inglés como en español, probablemente me va a tomar un tiempo editar cada entrada que he hecho.....pero espero encontrar el tiempo para traducir todo durante este fin de semana =)

Esta es la receta mas solicitada, originalmente es de mi mamá, pero ella no tuvo ningún problema con compartir con nosotros su deliciosa receta, aquí va:

Cake: (note: if you want your cake to be tall like the one in the picture.....you should make two cakes, this recipe is for only one cake)
- 6 large eggs (separated)
- 6 filled tbsp sugar
- 6 filled tbsp flour
- 2 tsp baking powder
- 1 tsp vanilla extract

Filling:
- 1 kg. dulce de leche

Syrup:
- 1 can condensed milk
- 1 can evaporated milk
- cognac or whiskey (optional)

Meringue:
- 3 egg whites
- 6 tbsp sugar
- 6 tbsp water
- 3 tbsp icing sugar

Torta: (Nota: si quieres que la torta sea alta como la de la foto....debes preparar dos bizcochos, la receta es solo para uno)
- 6 huevos grandes (separados)
- 6 cdas colmadas de azúcar
- 6 cdas colmadas de harina
- 2 cdtas de polvos de hornear
- 1 cdta de extracto de vainilla

Relleno:
- 1 kg. de dulce de leche (manjar)

Almíbar:
- 1 lata de leche condensada
- 1 lata de leche evaporada
- coñac o whisky (opcional)

Merengue:
- 3 claras
- 6 cdas de azúcar
- 6 cdas de agua
- 3 cdas de azúcar flor

Instructions:
1. Preheat oven to 180°C, butter and flour a cake pan, set aside.
2. Beat your egg whites until soft peaks are formed, then add sugar and beat until you get firm peaks, add the egg yolks one after another, and the vanilla, beat until everything is well mixed.
3. In another bowl, sift flour and baking powder and add it to the egg mixture with encircling movements, and put the mixture in your cake pan.
4. Bake for about 18 to 20 mins, or until a toothpick comes out clean.
5. Once both cakes have cooled mix two cans of condensed milk and evaporated milk (and whiskey or cognac if you're feeling sassy) and moist the cake, then fill it with dulce de leche, let it rest overnight and the next day prepare the meringue for coating the cake, use a blowtorch if you have one for decorating the meringue.
- Meringue:
1. In a small saucepan boil water and sugar until you have a heavy syrup, meanwhile beat your egg whites until soft peaks are formed.
2. Add your syrup and beat until the meringue has cooled, then add the icing sugar and continue beating for about 3 minutes.

Instrucciones:
1. Pre-calentar el horno a 180°C, enmantequillar y enharinar un molde de torta, reservar.
2. Batir las claras hasta que se formen picos suaves, luego agregar el azúcar y batir hasta que se formen picos firmes, agregar las yemas de a una y la vainilla, batir hasta que todo esté bien mezclado.
3. En otro bowl, cernir la harina y los polvos de hornear y agregar a la mezcla de huevos con movimientos envolventes, poner la mezcla en el molde de torta.
4. Hornear aproximadamente entre 18 y 20 mins, o hasta que al insertar un palo de brocheta, éste salga limpio.
5. Una vez que ambos bizcochos se hayan enfriado, mezclar dos latas de leche condensada y de leche evaporada (y whisky o coñac si te sientes atrevida), humectar la torta, luego rellenar con el dulce de leche, dejar reposar de un dia para otro, al día siguiente preparar el merengue para cubrir la torta, utiliza un soplete si es que tienes uno para decorar el merengue.
- Merengue:
1. En una olla pequeña hervir el agua y el azúcar hasta tener almíbar de pelo, entretanto bate las claras hasta que se formen picos suaves.
2. Agrega el almíbar y bate hasta que el merengue se haya enfriado, luego agrega el azúcar flor y continúa batiendo por aproximadamente 3 minutos.

Rainbow Cake / Torta de Arcoiris

I honestly think this is one of the greatest things I've ever done, and it's not even the hardest! But the coolest so far.....well in my humble opinion =)

It is very simple, it's pretty cheap and really really fun! You might be thinking it must take a while, it does, but it didn't took me more than two days.....if you want to save some time you can prepare the Marshmallow Fondant (MMF) a few days ahead, dye it and make all the decorations for your cake, if you want the decorations to be hard, you should keep them in a fresh and dry area, but if you want the MMF decorations to be soft, you can put them in an airtight container in your fridge, like I did.

Honestamente creo que esta es una de las cosas mas geniales que he hecho, y ni si quiera ha sido la mas difícil! Pero la mas cool hasta el momento.....bueno en mi humilde opinión =)

Es muy simple, es bastante económica y realmente entretenido! Puede que estén pensando que debe de tomar un buen tiempo, así es, pero no me tomó mas de dos días...si quieren ahorrar algo de tiempo pueden preparar el Fondant de Marshmallow (MMF) un par de días antes, teñirlo y hacer todas las decoraciones de la torta, si quieren que las decoraciones queden duras, deben conservarlas en un lugar fresco y seco, pero si quieren que las decoraciones de MMF queden blandas, pueden ponerlas en un recipiente hermético dentro del refrigerador, como lo hice yo
.

Recipe:

Cake:
- 2 cups vanilla yoghurt
- 1 cup vegetable oil
- 4 cups sugar
- 6 cups flour
- 6 tsp baking powder
- 6 eggs
- food coloring

Cream cheese filling:
- 2 8oz. cream cheese bar
- 6 tbsp butter or margarine, softened
- 3 tsp vanilla
- 3 tbsp milk
- 3 cups icing sugar

Meringue:
- 4 egg whites
- 8 tbsp sugar
- 8 tbsp water
- 4 tbsp icing sugar
- blue coloring

MMF:
- 1 bag of mini marshmallows (300 grs. approx)
- 1 kg icing sugar (approx)
- 2 tbsp water
- 1/2 cup shortening (for greasing your hands)
- food coloring
- latex gloves

Receta:

Bizcocho:
- 2 tazas de yogurt de vainilla
- 1 taza de aceite vegetal
- 4 tazas de azúcar
- 6 tazas de harina
- 6 cdtas de polvos de hornear
- 6 huevos
- colorante para alimentos
Relleno de queso crema:
- 2 barras de 250 grs de queso crema- 6 cdas de mantequilla o margarina, blanda - 3 cdtas de extracto de vainilla - 3 cdas de leche - 3 tazas de azúcar flor

Merengue:
- 4 claras
- 8 cdas de azúcar
- 8 cdas de agua
- 4 cdas de azúcar flor
- colorante azul

MMF:
- 1 paquete de mini marshmallows (300 grs. aprox)
- 1 kg de azúcar flor (apróx)
- 2 cdas de agua
- 1/2 taza de manteca (para engrasar tus manos)
- colorante de alimentos
- guantes de látex


Instructions for the cake:
1. Preheat your oven at 375°F, butter and flour a 5 inch cake pan, set aside.
2. Mix all the wet ingredients, and then just add the dry ingredients. Once you did this, separate 1/3 of the batter, for the top part of the cake, and divide it into 6 parts, dye them with the colors of the rainbow: red, orange, yellow, green, blue and purple.
3. Bake each cake from 15 to 20 mins approx, until it is golden or a toothpick comes out dry.
4. For the bottom repeat the same process with the other 2/3 of the batter. But bake them in an 11 inch cake pan, for 20 or 30 minutes, until golden or a toothpick comes out dry.
Note: Once they come out from the oven, they colors won't look bright, but once you cut your cake, they will look perfect and bright.

Instrucciones para el bizcocho:
1. Pre-calentar el horno a 180°C, enmantequillar y enharinar un molde de 30 cm, reservar.
2. Mezclar bien todos los ingredientes húmedos, y luego simplemente agregar los ingredientes secos. Una vez que hayas hecho esto, separa 1/3 de la masa para la parte superior de la torta, y divide este 1/3 en 6 partes, tíñelas con los colores del arcoíris: rojo, naranja, amarillo, verde, rojo y morado.
3. Hornea cada bizcocho por 15 a 20 mins aproximadamente, hasta que este dorado o al insertar un palito éste salga seco.
4. Para la parte de abajo de la torta, repite el mismo proceso con los otros 2/3 de la masa. Pero hornea los bizcochos en un molde de 30 cm durante 20 a 30 mins, hasta que al insertar un palito éste salga seco.
Nota: Una vez que los bizcochos salgan del horno, los colores no se verán brillantes, pero una vez que cortes la torta, se verán perfectos y brillantes.

Cream cheese filling:
1. With an electric mixer beat the cream cheese until it is soft and creamy, then add the vanilla, butter and milk, then finally add the sugar.
2. If it is too soft, you can put the cream cheese mixture in the fridge for about an hour.
3. Meanwhile you can prepare a syrup so your cake isn't too dry, just mix two cups of sugar with 2 cups of water, put them in the fire and let it boil for a couple minutes, until it gets thicker, then I just pinched the bottom part of the cakes and poured the syrup, making sure the borders were moist.

Relleno de Queso Crema:
1. Con un batidor eléctrico bate el queso crema hasta que este suave y cremoso, luego agrega la vainilla, mantequilla y finalmente el azúcar.
2. Si queda muy blando, puedes poner la mezcla de queso crema en el refrigerador por aproximadamente una hora.
3. Entretanto puedes preparar el almíbar, para que la torta no quede seca. Mezcla dos tazas de azúcar con dos tazas de agua, ponlo en el fuego y deja que hierva durante un par de minutos, hasta que este mas espeso, luego yo simplemente pinche la parte de abajo de los bizcochos y vertí el almíbar, asegurándome que los bordes queden humectados.

Meringue:
1. In a small saucepan boil water and sugar until you have a heavy syrup, meanwhile beat your egg whites until soft peaks are formed
2. Add your syrup and beat until the meringue has cooled, then add the icing sugar and continue beating for about 3 minutes.
3. Finally dye 1/3 of it with blue coloring.

Merengue:
1. En una olla pequeña hierve el agua y el azúcar hasta que tengas un almíbar de pelo, entretanto bate las claras hasta que queden suaves y se formen picos suaves.
2. Agrega el almíbar y bate hasta que el merengue se haya enfriado, luego agrega el azúcar flor y continúa batiendo por aproximadamente 3 minutos.
3. Finalmente tiñe 1/3 de color azul.

MMF (Marshmallow Fondant):
1. Put the mini marshmallows in a safe microwave bowl, spray some water on top of them, until they are moist and put them in the microwave during 30 seconds, then remove from the microwave and stir, put them in the microwave again for 30 seconds and stir, repeat this process until the marshmallows are completely melted.
2. Then add the icing sugar and melt the shortening to grease your hands and start kneading and adding sugar until you find the right consistency.
3. Put the mixture in a ziploc bag, and let it chill in the fridge for about an hour.
4. Remove from the fridge and grab a piece of the MMF and start kneading it, if the MMF is too hard and cold, you can warm it with your hands, and it will become softer, if you warm it too much you can add some extra icing sugar to make it harder.
5. Once you've found the right consistency put your latex gloves on, divide the MMF into different parts and start coloring them!! Add some coloring drops to the MMF and knead until you've found the desired color.
6. When you're done coloring your MMF, you should wrap each color with plastic foil and put them in the fridge so they are harder, which makes it easier to shape them.

MMF (Fondant de Marshmallows):
1. Pon los mini marshmallows en un bowl apto para el microondas, rocía un poco de agua encima de ellos, hasta que queden humectados y ponlos en el microondas durante 30 segundos, luego saca el bowl del microondas y revuelve, pon el bowl nuevamente en el microondas por otros 30 segundos y revuelve, repite este proceso hasta que los marshmallows se hayan derretido por completo.
2. Luego agrega el azúcar flor y derrite la manteca para engrasar tus manos y comienza a amasar y a agregar azúcar hasta que encuentres la consistencia deseada.
3. Pon la mezcla en una bolsa ziploc y dejala enfriar en el refrigerador por aproximadamente una hora.
4. Saca la bolsa del refrigerador y agarra un trozo de MMF, comienza amasarlo, si el MMF está muy duro o frío, puedes entibiarlo con tus manos y se pondrá mas blando, si lo entibias demasiado puedes agregarle mas azúcar flor para volver a endurecerlo.
5. Una vez que hayas encontrado la consistencia deseada ponte los guantes de látex, divide el MMF en varias partes y comienza a colorearlo!! Agrega algunas gotas de colorante al MMF y amasalo hasta que hayas encontrado el color deseado.
6. Cuando termines de colorear tu MMF, debes envolver cada color con papel foil y ponerlos en el refrigerador para que queden mas duros, lo que hace que sea mas fácil moldearlos.

- For the assembling, fill both cakes with the cream cheese filling and let it rest overnight, the next day you can prepare the meringue and cover the cake, and finally the funnest part! Decorate it with your MMF flowers, rainbows, etc, just have fun!

-Para montar la torta rellena ambas tortas con el queso crema y déjalas reposar de un día para otro, al día siguiente puedes preparar el merengue y cubrir la torta, y al final lo mas divertido! Decorar la torta con tus flores, arcoiris,etc de MMF, simplemente diviertete!

- Remember, the MMF decorations can be soft or hard, it depends on how you want them, if you want them soft, just put them in an airtight container inside your fridge, and if you want them to be hard just put them in a fresh and dry area. Like your kitchen cabinets =)

- Recuerda, las decoraciones de MMF pueden ser duras o suaves, eso depende de como las quieras, si quieres que sean blandas ponlas en un contenedor hermético dentro del refrigerador y si quieres que sean duras simplemente déjalas en un lugar fresco y seco, como los muebles de tu cocina.

It may be look difficult to make this cake, but it really isn´t, trust me it is not. If you have any doubts, don't hesitate asking me! Good luck and always have fun.

Lemon Meringue Pie Cupcakes

I made this lemon meringue pie cupcakes yesterday because I really needed to bake some of these cuties...and what a better way to enjoy a warm afternoon than with something really citric...mmmm....this is how they look on the inside:

Can you see it??....it was soooo delicious!

Ingredients:
Cupcakes: (makes about 30)
- 3 cups flour
- 2 cups sugar
- 1 tbsp baking powder
- 3/4 tsp salt
- 4 large eggs
- 1 cup room tº milk
- 1 cup butter at room tº
- 2 tsp vanilla extract
Directions:
- Mix flour, sugar, baking powder and salt until well combined, you can do it with your electric mixer if you want.
- In a large measurement bowl whisk the eggs, milk and vanilla...then add it slowly to the dry misture and beat until all the ingredients are well combined.
- Divide the batter evenly among the liners, about 1/3 and make a hole in the middle, like this:
Then in the middle of the hole add about a teaspoon of the lemon mixture.
Ingredients:
- 1/2 can condensed milk
- 1/4 cup lemon juice
- 2 egg yolks
Directions:
- Mix the condensed milk and lemon juice for about a minute and then add the egg yolks, mix until well combined. And now you can fill your cupcake.
When they´re done put then in the oven for about 20 minutes or until golden.

This is how they look when they´re ready....mmmm....but there´s one thing missing....

The meringue! Beat 4 egg whites until hard peaks are formed and add syrup (6 tbsp sugar and 6 tbsp water, bring it to a boil until thick). And beat well until it is cooled (7 minutes aprox). Finally add some icing sugar (1/4 cup) and beat for another minute.
Decorate your cupcakes!
And for a final touch use your kitchen blowtorch if you have one....but if you don´t then don´t worry....because they look good anyway.

But is so fun to burn them ahahahahaha!
