Tiny Pizzas...Yum!

Yesterday we had spaghetti night at my sister´school...I was gonna go with her and my boyfriend, but we found out that they had cancelled at the last minute....but we decided to still eat something yummy....so we made tiny pizzas...with all kinds of filling. Since we were at home there was also my brother and my great-aunt...my parents were out, but we made some for them too. Each one of us made our own pizzas.....they turned out fantastic!

Ther we have: Ham, salame, corn, mediterranean sauce, bolognese sauce, mushrooms, cheese, caramelized onion, basil, scallion, green pepper, orange pepper, and for seasoning: oregano, merquen (smoked chile), salt, cayenne pepper, and dill.

Here´s how they look after they came out of the oven:
This is a ham, cheese, salame, mushroom and green pepper pizza.

And this is a ham, cheese, onion, mushroom and orange pepper pizza.....this was mine....so goooood!

Pizza dough: (24 tiny pizzas aprox)
- 4 cups flour
- 2 large eggs
- 1/2 cup warm milk
- 1 tsp salt
- 12 tbsp oil
- 2 tsp baking powder
- cayenne pepper, dill, oregano, etc.

Directions:
Put all the dry ingredients and mix, and then add the rest of the ingredients, knead the dough until it is firm (about 1 minute) wrap it with plastic foil or put it in a ziploc bag (remember to remove the air) and let it rest in the fridge for half an hour. Meanwhile wash and cut all the ingredients you want for filling the dough, and butter and flour your molds.
Prepare your pizza and put it in the oven for 15 minutes....enjoy!

For making the caramelized onion:
- 2 small onions or 1 big onion
- 1 cup of water, aprox.
- 1 beef stock cube (or 1 tbsp soy sauce)
- 1 tbsp sugar
- 5 tbsp oil
Directions:
Heat your frying pan and add the oil, then sitr in the onions when the oil is hot, and fry until they tender (about 10 minutes), then add some water for another 10 minutes more....finally add the stock cube and sugar...yum!

Pizza Rolls....my mom´s specialty / Rolls de pizza.....la especialidad de mi mamá

My mom made these for my birthday about two weeks ago...they lasted like 5 seconds! Everybody loved them! So can´t wait to make my own pizza rolls...want the recipe?

Mi mamá hizo estos para mi cumpleaños hace como dos semanas atrás....duraron como 5 segundos! Todo el mundo los amó! Así que no puedo esperar a hacer mis propios rolls de pizza.....quieren la receta?

My pretty mom´s pizza rolls:

Ingredients for the dough:
- 1 egg
- 2 cups non-rising flour
- 2 tsp baking powder
- 6 tbsp vegetable oil
- 1/2 cup warm milk
- a pinch of salt
- oregano, grinded pepper, rosemary, dill...etc

For the filling (quantities up to you):
- Grated cheese
- Ham
- Tomato sauce
- Green and red peppers
- Black pepper, or any other condiment you want

1. For the dough: Mix all the dry ingredients, and add as many condiments as you want. Then add the egg and everything else.
2. Knead the dough for about a minute or until it is soft and doesn´t stick to your fingers, wrap in a plastic bag or foil paper and put it in the fridge for half an hour.
* Tip: This is the same dough I like to use for regular pizza.
3. Meanwhile cut the ham and the rest of the ingredients, stretch the dough and fill it with tomato sauce, then the ham, cheese, peppers, etc...and roll it as tight as you can.
4. Then cut the roll into 1" pieces.
5. Put them in the oven for 15 minutes aprox. at 375ºF.

You can also make tuna and mustard rolls, like these, same procedure.


Rolls de pizza de mi linda mamá:

Ingredientes para la masa:
- 1 huevo
- 2 tazas de harina sin polvos de hornear
- 2 cdtas de polvos de hornear
- 6 cdas de aceite vegetal
- 1/2 taza de leche tibia
- una pizca de sal
- orégano, pimienta molida, romero, eneldo...etc

Para el relleno (las cantidades dependen de uds):
- Queso rallado
-Jamón
- Tomato sauce
- Pimientos rojo y verde
- Pimienta negra o cualquier otro condimento deseado

1. Para la masa: Mexclar todos los ingredientes secos y agregar todos los condimentos que se desee. Luego agregar el huevo y lo demás.
2. Amasar la masa durante un minuto o hasta que esté suave y no se pegue en los dedos, envolver en una bolsa de plástico o papel foil y poner en el refrigerador por media hora.
* Tip: Esta es la misma receta que uso para la pizza normal.
3. Mientras tanto cortar el jamón y el resto de los ingredientes, estirar la masa y rellenar con la salsa de tomare, luego el jamón, queso, pimientos, etc....y enrollar lo mas apretado que puedas.
4. Luego cortar el rollo en trozos de 2.5 cm.
5. Ponlos en el horno por 15 mins apróximadamente a 190°C.

También puedes hacer rolls de atún y mostaza, como estos, con el mismo procedimiento.
