Pink and Black cupcakes....classy and sweet!

I made them for Valentine´s day this year...but they are great for any occasion, they are very fun to make and so delicious! Can´t wait to make them again!

Pink strawberry cupcakes, with cream cheese frosting

Ingredients:
- 1 cup strawberry yoghurt
- 1/2 cup vegetable oil
- 2 cups sugar
- 3 cups flour
- 3 tsp baking powder
- 3 large eggs
- Red food coloring
For the cream cheese frosting:
- 1 3oz. cream cheese bar
- 3 tbsp butter or margarine, softened
- 1 tsp vanilla
- 1 tbsp milk
- 1 1/2 cup icing sugar

1. Preheat you oven at 375ºF (180ºC).
2. In a large bowl place yoghurt, vegetable oil, eggs and the rest of the dry ingredients. Then add red food coloring until you get the desired tone.
3. Fill the cupcake molds with an ice-cream spoon until 3/4 of the cup.
4. Put them in the oven for aproximately 15 minutes of until a toothstick comes out clean.

For preparing the cream cheese frosting:
1. Beat the package of cream cheese with the butter and vanilla, until light and fluffy. Then beat in milk and gradually add the icing sugar until the icing is consistent.
2. Dip the cupcakes into this frosting and add sprinkles if you want, eat right away of wait until the frosting has dried.
3. Take a bite out of these pretty cupcakes as soon as possible!

Oatmeal cookies....never say no to them!

I love this recipe because after you make this cookies you almost don´t have to do the dishes! You need very few things to make them....and they are great for snacks and for giving them when someone is not feeling so well, they always work!

Me encanta esta receta porque luego de que haces estas galletas no tienes muchas cosas que lavar! Necesitas solo un par de cosas para poder hacerlas....son buenísimas como bocadillos y para regalar cuando alguien no se siente bien, siempre funcionan!

Oatmeal cookies (makes about 70 cookies)
Ingredients:
- 1/2 cup butter
- 2 cups sugar
- 3 large eggs
- 2 1/2 cups flour
- 1/2 tsp baking soda
- 5 tsp baking powder
- 2 cups oatmeal
- tbsps hot water
1. Preheat you oven at 375º F.
2. In a large bowl mix butter with sugar until smooth, then add eggs one by one. After everything is well mixed, add the rest of the ingredients. And if your dough is too dry or too thick add hot water until your dough looks like this:


Galletas de avena (aproximadamente 70 galletas)
Ingredientes:
- 1/2 taza de mantequilla
- 2 tazas de azúcar
- 3 huevos grandes
- 2 1/2 tazas de harina
- 1/2 cdtas de bicarbonato
- 5 cdtas de polvos de hornear
- 2 tazas de avena
- cdas de agua caliente
1. Pre calentar el horno a 180°C
2. En un bowl grande mezclar la mantequilla con el azúcar hasta formar una pasta suave, luego agregar los huevos de a uno. Luego de que todo esté bien mezclado, agregar el resto de los ingredientes Si la masa está muy seca o espesa, agregar agua caliente hasta que la masa se vea como esto:


3. Butter you pan, and add teaspoons of dough, remember they get a lot bigger in the oven so try to separate them as much as posible.

3. Enmantequilla la lata del horno y pon cucharaditas de masa, recuerda que las galletas crecen mucho dentro del horno, por lo que debes separarlas lo mas posible.

4. Bake them for about 8 minutes and let them cool for a while, then they are ready to be eaten!
After they were done, I sprinkled them with icing sugar and powdered cinnamon....they look even more yummier.

4. Hornearlas por aproximadamente 8 minutos y dejarlas enfriar un poco, entonces estarán listas para ser devoradas! Luego de que están listas, les espolvoreé con azúcar flor y canela en polvo...se ven incluso mas deliciosas.

Simple, cheap and easy: Hotcakes!

Sorry my pictures look so bad...my camera was broken so I had to take pictures with my old cell phone....but I can asure you that this hotcakes are wonderful!

Hotcakes (makes 12 aprox.)
Ingredients:
- 1 cup flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 large egg slightly beaten
- 1 cup milk
- 2 tbsp melted and cooled butter
- Extra butter fot buttering your fry pan

1. Preheat your fry pan, at medium tº, if it is a thin fry pan, and at medium high tº if it is a thicker fry pan.
2. In a big bowl mix flour, sugar, baking powder and salt. Then add milk, butter and the egg. Beat until there are no lumps.
3. Butter your fry pan (becareful not to get burned), and add your batter (as many as you want), cook until bubbles start to form on the top of the hotcake and edges are slightly dry, then turn until they are ready.
4. Serve with corn or maple syrup.

Cinnamon rolls: my favorite breakfast... / Rollos de Canela: mi desayuno favorito....

What a better way to start your day than with a cinnamon roll? Can´t think of anything else...this recipe is from my mom....once you eat THAT you never go back! ahaha....I swear!

Que mejor manera de empezar tu día que con un rollo de canela? No se me ocurre nada mas...esta receta es de mi mamá...una vez que la comas no te arrepentirás....lo prometo!

Cinnamon Rolls with Cream Cheese Icing

Ingredients:
- 1 1/2 tsp dry yeast
- 1/4 cup warm water
- 1/2 cup butter, at room tº
- 1 cup warm milk
- 1/3 cup sugar
- 1 tsp salt
- 1 egg, slightly beaten
- 4 3/4 cups flour

For the filling:
- 1/2 cup sugar
- 4 tbsp powdered cinnamon
- 3 tbsp butter, at room tº

For the cream cheese icing:
- 1 8oz. cream cheese bar
- 3 tbsp butter or margarine, softened
- 1 tsp vanilla extract
- 1 tbsp milk
- 1 1/2 cup icing sugar

Preparation:
1. Solve the yeast with the 1/4 cup of warm water. Beat the butter with the sugar and salt, add the milk and solved yeast, and finally the egg. Incorporate flour until you get a soft dough.
2. Knead the dough into a floured surface until it doesn´t stick to your fingers and let is rest in a warm place for at least an hour, until it reaches the double of its size.
3. Roll out the dough (into a floured surface) and spread the butter and the mix of powdered cinnamon and sugar. Roll in and cut into 1" rolls.
4. Put them in a buttered pan, separate from each other and let them rest in a warm place for another hour, until they have doubled their own size.
5. Bake at 375ºF for about 15 or 20 mins aprox.
6. For preparing the cream cheese icing: Beat the package of cream cheese with the butter and vanilla, until light and fluffy. Then beat in milk and gradually add the icing sugar until the icing is consistent.


Rollos de Canela con Glaseado de Queso Crema

Ingredientes:
- 1 1/2 cdtas de levadura en polvo
- 1/4 taza de agua tibia
- 1/2 taza de mantequilla, a t° ambiente
- 1 taza de leche tibia
- 1/3 taza de azúcar
- 1 cdta sal
- 1 huevo, ligeramente batido
- 4 3/4 tazas de harina

Para el relleno:
- 1/2 taza de azúcar
- 4 cdas de canela en polvo
- 3 cdas de mantequilla, a t° ambiente

Para el glaseado de queso crema:
- 1 barra de 250 grs. de queso crema
- 3 cdas de mantequilla o margarina, blanda
- 1 cdta de extracto de vainilla
- 1 cda de leche
- 1 1/2 tazas de azúcar flor

Preparación:
1. Disuelve la levadura con 1/4 de taza de agua tibia. Bate la mantequilla con el azúcar y la sal, agrega la leche y la levadura disuelta, finalmente agrega el huevo. Incorpora la harina hasta obtener una masa suave.
2. Amasa la mezcla encima de una superficie enharinada hasta que la masa no se pegue a tus dedos y déjala reposar en un lugar tibio durante al menos una hora, hasta que duplique su tamaño.
3. estira la masa (encima de una superficie enharinada), esparce la mantequilla y la mezcla de canela en polvo y azúcar. Enrolla la masa y corta rollos de 2,5 cms.
4. Pon los rollos en la lata el horno enmantequillada, separados unos de los otros y déjalos reposar por otra hora, hasta que hayan duplicado su tamaño.
5. Hornea a 180°C durante 15 a 20 mins apróx.
6. Para preparar el glaseado de queso crema: Bate el paquete de queso crema junto con la mantequilla y la vainilla, hasta que este ligero y esponjoso. Luego, sin dejar de batir, agrega la leche de a poco y agrega el azúcar flor hasta obtener una mezcla consistente.

Real lemon and orange cookies

It took me like 2 days to bake and paint these cookies, and it would´ve take me much longer if my good friend Claudia wouldn´t have helped me =) but they were really worth it! Don´t cha think? They don´t look perfect because I had to carry them out and it was a sunny day...so they started to melt a little bit...but the taste is what most matters...and it was great! Thanks For your help Clu!!

Lemon and orange cookies (same dough, different citric):
Ingredients:
- 4 cups non-rising flour
- 1 cup butter, at room tº
- 2 1/4 cups sugar
- 4 eggs
- 2 tsp lemon zest/2 tsp orange zest
- 3 tbsp lemon/orange juice
For the glaze:
- Icing sugar
- Lemon/orange juice
- Food coloring
* This recipe makes about 70 cookies, you have to divide the recipe in two, so you can add lemon or orange....obviously =)

1. Beat in half of the butter, orange or lemon zest, sugar and salt, until smooth (the half of everything). Add the 2 eggs one by one, without stop beating. Then add orange/lemon juice and incorporate the sifted flour carefully.
2. Knead the dough until it is ready to stretch....use more flour if needed.
3. Cut 1/2" circles and put in greased baking pan...bake at 375ºF for about 8 minutes.
4. Prepare the glaze: Mix icing sugar with lemon or orange juice and then add food coloring until you get the wanted tone.
5. Have fun painting your cookies!

Guacamole!

I made these for my birthday party too...it was sooo yummi....

Guacamole:

Ingredients:
- 2 big avocados
- 2 big tomatoes
- 1 small purple onion
- 1 handful of coriander
- 1 garlic clove
- salt
- olive oil

Mash the avocados and cut the tomato in small cubes, then grind the onion, garlic and coriander, then mix averything and season it with olive oil and salt. Decorate with doritos =)

Pizza Rolls....my mom´s specialty / Rolls de pizza.....la especialidad de mi mamá

My mom made these for my birthday about two weeks ago...they lasted like 5 seconds! Everybody loved them! So can´t wait to make my own pizza rolls...want the recipe?

Mi mamá hizo estos para mi cumpleaños hace como dos semanas atrás....duraron como 5 segundos! Todo el mundo los amó! Así que no puedo esperar a hacer mis propios rolls de pizza.....quieren la receta?

My pretty mom´s pizza rolls:

Ingredients for the dough:
- 1 egg
- 2 cups non-rising flour
- 2 tsp baking powder
- 6 tbsp vegetable oil
- 1/2 cup warm milk
- a pinch of salt
- oregano, grinded pepper, rosemary, dill...etc

For the filling (quantities up to you):
- Grated cheese
- Ham
- Tomato sauce
- Green and red peppers
- Black pepper, or any other condiment you want

1. For the dough: Mix all the dry ingredients, and add as many condiments as you want. Then add the egg and everything else.
2. Knead the dough for about a minute or until it is soft and doesn´t stick to your fingers, wrap in a plastic bag or foil paper and put it in the fridge for half an hour.
* Tip: This is the same dough I like to use for regular pizza.
3. Meanwhile cut the ham and the rest of the ingredients, stretch the dough and fill it with tomato sauce, then the ham, cheese, peppers, etc...and roll it as tight as you can.
4. Then cut the roll into 1" pieces.
5. Put them in the oven for 15 minutes aprox. at 375ºF.

You can also make tuna and mustard rolls, like these, same procedure.


Rolls de pizza de mi linda mamá:

Ingredientes para la masa:
- 1 huevo
- 2 tazas de harina sin polvos de hornear
- 2 cdtas de polvos de hornear
- 6 cdas de aceite vegetal
- 1/2 taza de leche tibia
- una pizca de sal
- orégano, pimienta molida, romero, eneldo...etc

Para el relleno (las cantidades dependen de uds):
- Queso rallado
-Jamón
- Tomato sauce
- Pimientos rojo y verde
- Pimienta negra o cualquier otro condimento deseado

1. Para la masa: Mexclar todos los ingredientes secos y agregar todos los condimentos que se desee. Luego agregar el huevo y lo demás.
2. Amasar la masa durante un minuto o hasta que esté suave y no se pegue en los dedos, envolver en una bolsa de plástico o papel foil y poner en el refrigerador por media hora.
* Tip: Esta es la misma receta que uso para la pizza normal.
3. Mientras tanto cortar el jamón y el resto de los ingredientes, estirar la masa y rellenar con la salsa de tomare, luego el jamón, queso, pimientos, etc....y enrollar lo mas apretado que puedas.
4. Luego cortar el rollo en trozos de 2.5 cm.
5. Ponlos en el horno por 15 mins apróximadamente a 190°C.

También puedes hacer rolls de atún y mostaza, como estos, con el mismo procedimiento.

Would you like some pasta salad???

I definitely am a pasta lover, and also like salads...I like them a lot, specially in hot days of summer....so the other day I wanted to make pasta but my sister wanted to eat salad...so glad we found a way to make both of us happy =)

This pasta contains green stuffed olives, kanikama, avocado, tomato, green and red peppers, and mayonaise mixed with cream...you can prepare it the way you want, with mushrooms, tuna, chicken, etc....the best of this dish is that you can prepare it in very short time, and save it in the fridge if you want to eat some more later...or take it to class or work...why not??
